Wine & Chocolate
Adventurous chocoholics and lovers of fine wine are invited to join us as we experiment with various wine and chocolate pairings. At this "experimental event" we'll examine different combinations of chocolate and wine to better understand how they can be paired for maximum enjoyment. We will taste a variety of milk and dark chocolate artisanal Candies, Chocolate-covered Strawberries, and Chocolate-Dipped Biscotti, and pair our delicacies with appropriate wines including Port, Sauternes, and Champagne. We'll compare a wine in both its dry-fermented and dessert forms, and see how each pairs with chocolate. Join us for this indulgent experience, and learn how to match the flavors, sweetness, acidity, and texture of wines with chocolate.

In the past I have conducted this tasting to focus on a specific region (say, Italy), but the time is ripe to look further afield of just one region and examine the flood of high-value wines available globally. I have long said that a person does not need to spend more that $10 to $15 dollars to find some pretty spectacular wine, and this event is going to prove it. At this event we will taste a number of wines from across the globe that represent good value ($10 - $15 range), some from lesser known regions and some from the usual suspects.

Art of the Cocktail - the Bitter End
Installment number three of our very popular Art of the Cocktail series. This edition builds on the classic definition of the cocktail: "a stimulating liquor composed of spirits of any kind, sugar, water, and bitters-it is vulgarly called a bittered sling and is supposed to be an excellent electioneering potion, inasmuch as it renders the heart stout and bold, at the same time that it fuddles the head. It is said, also to be of great use to a democratic candidate: because a person, having swallowed a glass of it, is ready to swallow any thing else." In this class we will closely examine the effect of bitters on several potent libations. Heavy appetizers will be served to help temper the impact of the spirits.

One of the biggest questions that I get at my wine classes is: How do you shop for wine? Wine shopping is really about relationship building. While you can spend a lot of time scurrying around town looking for the best wine at the best price, your time will be better spent cultivating a rapport at a few local wine shops. Getting to know the owners, or knowledgeable sales staff at a local wine shop, or more importantly getting them to know more about your own tastes and interests will ultimately lead to a more enriching shopping experience. At this event, hosted in the back room of Martignetti's Fine Wine in Brighton, Wine Director George Bardis will help me lead the group through a selection of fun, high-value wines, culminating in a guided shopping tour of the store.

Pinot Noir

Pinot Noir
Pinot Noir is known to be a difficult grape to cultivate, which in turn makes it a variable producer of fine wine. The grape has achieved greatness in the regions of Burgundy, France and is enjoying a growing success in California and Oregon in the US. Other winemaking countries have taken up the task of producing Pinot Noir, like New Zealand, but its production is a true labor of love. At this event we will a number of Pinot Noir based wines from a variety of regions, including its famous starting point of Burgundy, France.

Blends vs. Varietals
In a recent class, one of my students asked a very interesting question: why do wine makers blend grape varieties in their wines? It is an interesting question and it got me to thinking about a possible class, where we try to discern why and how wines are blended and how blended wines compare to single-varietal bottlings. At this event we will taste and compare several blended and non-blended wines from regions around the world, along with a selection of artisanal cheeses and breads.

Chateauneuf du Pape

When people ask me what's my favorite wine, I usually reply that I have too many too li... But if you ask me what wine I would want to have if I were stranded on a desert island, it would have to be Chateauneuf du Pape. Full, throttle red wine from the Southern Rhone, CDP has vaulted from "tremendous value" to "expensive treat" over the last several years, largely due to the preponderance of great, consecutive vintages. At this event we will taste through numerous CDP wines, all from the recent highly touted vintages and we may throw in a couple of older wines to give people some experience with how CDP ages.

Taste is perhaps the most subjective of our senses. This is due to the fact that human physiology causes people to interpret tastes in a manner unique to each individual. Add to this the now dizzying array of cuisines and wines that are available and you have a recipe for gourmet disaster. In this one-day class, we'll examine the concepts of how we taste and how this applies to matching wines with food. This class will include a series of white and red wines, each paired through a food components exercise, as well as light appetizers.

Holiday celebrations would somehow be diminished without the inclusion of fine Champagne. In the past, we've looked at the overall category of sparkling wines, all very nice. However, sometimes there is nothing like the real thing to set one's heart aflutter. At this tasting we will sample several wines from Champagne, including many vintage and tête du cuvee bottles.
